How it works
The service revolves around the tiered stand, which arrives at the table already arranged. The savoury tier holds the finger sandwiches, cut thin as English custom requires; then come the freshly baked scones, to be split by hand and filled with clotted cream and jams; the petits fours sit at the top. Tea is chosen from a menu of loose leaves and can be changed during the afternoon, so you can pair the savoury course with a full-bodied black tea and the sweets with something more delicate.
Couples or friends find a quiet table near the fireplace; families or small groups share the stand, and time stretches out unhurried until it is evening outside.
