The evening begins with an aperitif at the Rotonda Champagnerie, continues with dinner in the panoramic dining room of Beides, then everyone waits for midnight on the terrace of the Americano Bar with toasts and fireworks, and the party goes on with a DJ set into the new year. <\/p>\n\n<p class=\"wp-block-paragraph\">Arrival is <strong>from 8:00 pm on Thursday 31 December<\/strong>. Here the aperitif is served standing, with champagne, oysters, Calvisius caviar and blinis, while the DJ set accompanies the start of the evening and braziers glow outdoors. <\/p>\n\n<h3 class=\"wp-block-heading\">Dinner in the panoramic dining room<\/h3>\n\n<p class=\"wp-block-paragraph\">Dinner is served in the dining room of <a href=\"https:\/\/www.collinarelais.com\/en\/restaurant\/\">Beides Restaurant<\/a>, overlooking the valley. Starters arrive in the centre of the table, to be shared; between courses guests are free to get up, drop by the lounge, grab a drink or take a few photos. <\/p>\n\n<ul class=\"wp-block-list\">\n<li><strong>Sharing starters<\/strong>: focaccia, Normandy butter and Cantabrian anchovies; amberjack sashimi; crispy potatoes, black truffle and Parmigiano Vacche Rosse; Pecora Gigante Bergamasca, chorizo and chives.<\/li>\n\n\n\n<li><strong>First courses<\/strong>: lobster cappellacci, ricotta and lemon; Pastificio Mancini tubetti, cicerchia beans and oxtail.<\/li>\n\n\n\n<li><strong>Main course<\/strong>: rack of veal, chestnuts, black truffle and mustard.<\/li>\n\n\n\n<li><strong>Dessert<\/strong>: pretzel, banana, chocolate and caramel; rose cake; churros.<\/li>\n<\/ul>\n\n<h3 class=\"wp-block-heading\">Midnight on the terrace<\/h3>\n\n<p class=\"wp-block-paragraph\">Before midnight everyone moves to the <a href=\"https:\/\/www.collinarelais.com\/en\/americano-bar\/\">Americano Bar<\/a> and its panoramic terrace, where the countdown takes place with the valley spread out ahead. As the new year strikes, the toast and the fireworks display follow. <\/p>\n\n<h3 class=\"wp-block-heading\">After Midnight Party<\/h3>\n\n<p class=\"wp-block-paragraph\">Straight afterwards the party starts with a DJ set between the Americano Bar and the terrace.
